Thit Kho – Vietnamese caramelized pork belly. There are many ways to cook Thit Kho. It’s Jolie’s recipe – which she learned from her mom.

2 Tablespoon garlic, minced
3 Tablespoon shallot, minced
3 Pounds pork belly
3 Tablespoon fish sauce
2 Tablespoon dark soy sauce
2 Tablespoon dark brown sugar
2 Cups coconut water
1 Teaspoon salt
1 Teaspoon black pepper
2 Tablespoon fried shallot
2 Tablespoon vegetable oil

How to cook:
1. Cut pork into 1 inch cube
2. Marinate the pork with minced garlic, minced shallot, fish sauce, black pepper, salt. Then Give it a little mix. Marinate in fridge for 30 minutes or you can take it longer.
3. Hot pan, add vegetable oil. Then add marinate pork. Next add dark brown sugar, add soya sauce, add coconut water.
4. Simmer for 30 minutes
5. You should eat Thit Kho with white rice- Yummy
